I've had my UJSSM sitting in a 2L oak cask for almost 2 weeks. With the little barrels they say to age 2-4 weeks. Once I get the color and flavor from the barrel I want, I plan on putting it in glass and aging for a year or so.
It has nice light color, a nice taste of caramel/vanilla, but has quite a bite. Is the bite from bad cuts or because it's still not aged?
