The fact you remember MD20/20 has me worried about your misspent youth.

Best way to clarify is to leave it alone. And if you have someplace you can get it down to 35 F that will really help the yeast drop. The milky you are seeing means you had a good ferment and you are seeing billions of yeast cells giving the milky color. I would give it a few more days, rack into a new fermenter off the grain. Then let is set for a week to settle out. You will also want to search for "squeezing the grain" to find different ways to get the wonderful alcohol out of your grain bed. I may have mentioned this but one of the post important ingredients in distilling is patience.

Yes, it is getting there, but a 1 says there is still a bit of sugar. But brix is usually not given in 3 decimals like that so are you sure that is not 1.000 specific gravity? The number looks like a specific gravity reading. A 1.000 specific gravity says all the sugar is gone. A 1 brix says there is 1 gram of sugar per 100 ml of solution. You are looking for 0 brix or about .996 specific gravity for the final reading.

I removed the corn solids before putting the malts in and continued simmering at about 190° for a couple hours. So all I need to strain out is the malt debris.

I use natural gas not electricity so temp control is not an issue

If it is gravity of 1.000. The OP said it was brix which says there still fermentation to complete. Then there is the time needed to squeeze and settle. OP can do what she wants but my advice is to slow down, buy some good drink to tide over for a week and let this ferment have some time to finish and clear.

Your right. I had a brain fart. I was thinking gravity not Brix.
1.000 Brix equals 1.004 Sg. My only excuse is Brix being seldom used here. :oops:

As We already know, keep an eye on the ferment while waiting. :ewink:

You will want to look for a glass cylinder. You will be testing high proof alcohol and plastic is not recommended for such.

I would be worried about the bitter tasting mash. If you say tart or like Grand Cru wine, yes. But bitter for a fermentation?

My terminology is lacking as I mentioned before.

Gonna go taste it now, since I just got up for the day...

Ok.. it's very tart and similar to a dry champagne. No sugar detectable by taste. It is clearing, no longer milky... looks more like Carmel rather than milky

Hmmm 6 pint yield from >3 gallons
Still have half the mash in fermenter...

Potent stuff... whew... off the brix scale...
It sunk so fast the hydrometer bounced off the bottom of the cylinder... lol

Burns with a clear blue flame like natural gas... no orange flame whatsoever... I'd hazard to say it's somewhat north of 120 proof

Lovely corn flavor too! I mark this a success. Husband even likes it and he is not a whiskey drinker. He likes beer and Margaritas. I might try a tequila run next.

Your triple scale hydrometer is not the correct tool for measuring distillate. You need a spirit hydrometer or also called an alcometer. The two devices are calibrated completely different. The one you describe having measures SG, Brix and Potential Alcohol, not ABV. When you can, order up a glass sample cylinder and the correct type hydrometer, two even, as they get lonely and commit suicide unexpectedly unless they have company.
