Massive dunder pit

Pictured next to an outdoor fermentation vat on the Wikipedia Rhum agricole page...

Is that what I'm seeing here? A dunder vat?
It looks thick and nasty to be a ferment like on the right...
Someone tell me what that is

I don't think they recycle their dunder in Guadeloupe, so its probably a waste tank.

There is foam running down the sides, it’s fermenting.

If it wasn’t centrifuged, it would be solids and wax left in the juice.

Gut feeling is that its a ferment , the one on the left is probably just building up a head of steam.....the one on the right is a bit older and has settled down a bit.
It's a cool photo, something for the sanitizer geeks to chew on.
It also states right under the photo " fermentation tanks"
Reminds me a lot of these photos.

The homebrewer side of me twitched a bit when I saw that photo. Haha
Probably makes great booze. Who knows, there could be some wild yeast wafting around out there that adds to the flavor profile.

As cool as the vats are, I couldn’t take my eyes off that water wheel in the background. Wouldn’t half love to know what’s on the other end of its shaft.

If that's fresh press cane juice that what you see there would be called skimmins by some folks.
If the out fit is limited on processing equipment, then cane solids make it into the fermentation tanks.
Friend of mine says the solids can make the finished distillate bitter. So he gets the fermentation going and as the developing CO2 rises it will push solids to the top where he will skim off. Its a similar thing that is done when cooking juice for syrup.
Or can outfit the fermentation tank with a large port and valve just below the head. When the foam head is at it's most buoyant, open the valve and drain off the skimmins. This is done to eliminate the manual labor associated with physical skimming.
Skimmins get sent back to the live stock for feed supplement.

Wauw, amazing picture. That gets me excited! In the carrebean it is quite common to not cover the fermenter. Even the usage of wild yeast in some cases is prefered. The rum does not care

This 'rum' made from cane syrup on Capeverdie it is called grog, and its super tatsy.

This is fresh sorghum juice. I imagine fresh cane would be very similar. Green, sticky, some solids and “stuff” vigorous and quick ferment.

Boil tank or pre-fermentation tank before head to secondary fermentation tanks.
