I added melanoidin and ale malt to ujssm and it smells amazing

Added 2kg of ale malt and . 5kg of melanoidin malt to ujssm after the first generation. I also bumped up the total volume to 30l. The smell coming off this mash makes me hungry... Damn. Will let you know how it tastes after distillation.

Melanoidan is nice, I use it in my rye. It is lovely off the still.

My brain read that as "Melatonin" and I was thinking "this will be interesting..." lmfao

The distillate is lovely. Has a real sweetness and brightness to it now. Sweetness from the backset has come through in the second generation and I can't wait to see more. The grain takes up a large volume in my fermenter though. I topped it up to allow 30 litre float

This is going really well. It's just a bit confusing to determine when the grain is spent. I've just continued to add more grain rather than remove the spent grain and the flavour is really developing. I'm going to have to remove some soon just because the volume has become too great.
