Mashing corn overnight
Trying to find a recipe on here, where the guy mashed the corn overnight. He started like at 8pm, cooking the corn. By 10pm had it wrapped in insulation and blankets to sit over night. If anyone knows where that is I would appreciate it. THANK YOU

Time and temp.
If the temp is on the low side, figure out how to hold the temp for a longer time.
Plan B is steam injection

Re: Mashing corn overnight
I always mash overnight. I grind my corn, add to hot water, add my htl, bring to boil, boil 2hrs,when temp drops back down to 170 I add more htl as the first dose was sacrificial only to thin out the mash for cooking. Thinning out with the first dose makes it easier to stir and helps it to not stick or burn. let sit till temp is 130 and add my gluco. I get great conversion with this process.
I drink so much now,on the back of my license it's a list of organs I need.

Grind corn, add water to get 32*c. Add yellow label yeast. Works every time. I add a brew belt and blanket on day two.

The concoction in yellow label yeast and time is the easiest option.
Not to say it's going to be the best tasting product. But it will get the job done.

Have had very good results as long as ferment temperature is controlled. Age it on oak
Before YLY I did cracked corn mash and ferments. Those were long days. BIAB was a mistake I made on my first attempt. Got great conversion. I lifted that 20 gallon bag and not a drop drained out! There was sticky sugar residue all over my equipment and shop by time we were done.
YLY and steam strip corn now. Saves huge time, effort and power.
Sorry for the hijack.

Glad I'm not the only one who had this happen! I lifted a BIAB out of a 10 gallon batch of bourbon and might have had 2 gallons of water left in the bottom. Pretty sure that's when I decided a steam setup wouldn't be so complicated...Dancing4dan wrote: ↑Sat Oct 07, 2023 6:18 am I lifted that 20 gallon bag and not a drop drained out!
