how long is the minimum time to drink rum?
the longer it is, the better it is, but what is the minimum time?

Minimum? I guess you could lay under the condenser with your mouth open. How long does it take to fall from the spout to your mouth?

Hope that didn’t come across as being too much of a smart ass. The best honest answer I can give you is that there’s no minimum. You can drink it straight off the spout (I do sometimes, for quality control purposes only, naturally), or as soon as you’re done making your cuts, blending, etc.
Spirits all seem to improve with age, but some never get the chance. If you do it right, it’s good right off the still.

Depends on your cuts and what you like... I like my rum white and like it right off the still, but it's a bit better with 24 hours of airing out, after that it's fine.

About 5 minutes.....its your choice.

You can do more than one cut from a run, some left white for instant gratification and some for aging.
I try not to start drinking my aging rums for at least two years.

Can't speak to a minimum, it depends on your cuts and tastes, but I like no less than a year and longer is better. At three years it is becoming something really nice and very worthwhile. Time on oak really transforms a new rum into something special.
Tight cut rum is more bland but enjoyable very young, like a few days or weeks after proofing.
Looser cuts takes more time but is also more interesting and engaging to drink, time measured in many months to years.
Your stillhouse, your rickhouse, your product. You enjoy it when you feel it is ready and not on someone else's timeline.

I noticed a very obvious improvement between six months and twelve months. Mellower, richer mouth-feel and more balanced flavour. But still not quite what I’m after. In March I’ll find out about the two year situation. I make sipping, all-molasses rums. Young ones are still fantastic mixed with coke or ginger ale.
Like the others say, bottling the right jar white is also great. But a little time in the bottle seems to improve most things - and I mean without wood. My brandies have all surprised me lately. Thank God, cos some of them were pretty disappointing at the start.
