I was going to start my rum wash last night, but decided I had to go through all my equipment first and would start it today. Today was 55* and we let the wood stove go out. Our house is about 70* w/o the stove going. Tue it's going to be around 60* so we won't have the stove on then either.
I'm thinking the wash would like it consistent. I have read that the yeast won't die at 70*, just slow down and activate again when the room gets warmer. I also read a higher temp brings out more flavor in the rum when it's fermenting.
I'm wondering if it would be better to wait a bit longer until the stove stays on for good (probably another couple weeks). I'm also not going to run it until it snows so it would just be sitting around for a month or so.
should I wait?
