American single malt

Howdy all,

Have you guy seen that multiple distilleries are trying to get a standard of identity created for American single malts?

Anyway, this got me thinking what malts would you choose to make a complex interesting single malt whiskey using ONLY malted barley?

Lots of heavy hitters that have made a difference on that list.

Right, lots of big names on the commissions membership list

Hi Bolverk

I have made a whiskey going on something like this:

Munich Malt 12.45%
Cara red 10.37%
pilsner 74.69%
choco 2.49%
yeast us-05

That resulted in a very malt forward whiskey for me. Somewhat similar to that of Westland. But obviously with differences in the flavor imparted during maturation :)

Thats double what I've been to! I've had offerings from 7 of them. I have to say that if I was going to simplify my hobby, and focus on one spirit, it would be SMW.
I'm still savoring my first Single Malt, and as basic as the mash bill was it created a very tasty spirit. The one I've got in the works this round has some crystal 70 in it (around 8%), and the finished wash of the first ferment tastes very promising. Ive got 3 ferments left to mash to fill a 5 gallon barrel.

I've yet to use any of my virgin oak to age single malt. It seems like a lot of American Single Malt is new fill barrels.
I see that as a good thing, as it will differentiate American Single Malt and it will ensure that used bourbon and rye barrels will continue to be exported for all of the other brown spirits that I enjoy.

I know that the proposed rules say 'Oak barrel', but I wouldn't mind seeing that changed. For my own selfish interests of course. :ebiggrin:

Nice Bushy.
The one that sticks out the most for me is Boston Harbor.
First of all the lady that founded and owns that is, well,, a lady. A rarity in distilling but getting better.
Also, she was a co-founder (that never gets talked about) of Sam Adams. I have no idea why or how it came about that she would walk away from Sam Adam's type of money???

But in any case, she is a tip of the spear type of player. Super smart lady.

I used virgin oak in a single malt, once....

It totally overpowered the malt flavours, I've been using used oak for my single malt since

The expression I had from Balcones was a new cask single malt and I'd have to agree, I think the new oak just gave so much spice it was hard to define any one flavor.

60% Pale Malt, 40% Briess Honey Malt, fermented with an ale yeast at around 70'f
