been reading this forum for a while and thought would join.

I've been making commercial fruit wines for a few years . been living in China but originally from.new York State.
and during the past 3 years was stuck in lockdown a lot here sostarted distilling.. at home. first took wines not good enough to sell and made some good brandy. I. have a few recipes like my chocolate brandy that became popular. so started up scaling. I use a factory that does my large batches but I still do experiments and new recipes at home. mostly use a 30 liter pot still.
I've made some successful rum, and gin, lots of brandy. uzuo, schnapps, i will try some malted whiskeys this year when things warm up outside. I made a really interesting black tea whiskey that aged well for 1 year. really popular everyone tasted it thought was a malted whiskey,

I love trying new things and Building layers of flavors blending and using botanicals.
