The way I did it at the home scale is a long process, but at the end you'll have a lot of product. I used a potstill and a thumper, and this is written for using them. The amounts of everything is to your taste or volume needs and trial and error, and very basic on purpose. Go by what works for you. The main thing is that alcohol + acid = esters. So you're going to try and increase it.
You're going to need #1 a really big and active dunder pit full of hogo, you'll need a lot! Adjust the PH in it to keep it active.If you don't have enough dunder, use as much as you can and mix with water. This recipe will make a lot of dunder, you can catch up. You'll need a way to test PH, sulfiric acid and all of the safety gear to go with it plus knowing it's dangers, and lime and the safety equipment for it and knowledge. Remember the movie Fight Club? THESE CHEMICALS ARE DANGEROUS! Plus a bunch of carboys/containers that can handle high or low PH and high abv. You'll have a lot of liquids sitting around!
Make a rum wash, big enough to fill your boiler minus 20%, with just molasses water and yeast, no sugar. Add 20% live dunder when the ferment is close to being finished, let finish and then wait a few days before stripping. Add live dunder to the halfway of the thumper and strip. Collect the strip in two containers, the first high abv half and the lower abv half. Save what's in the thumper after, it's got the good stuff in it. I used that thumper juice as 30% of the next ferment. I used seashells in the fermenter to keep the PH in check. Add some lime to the saved thumper juice in a carboy to raise the PH, and let it settle out over the next 24-48. Rack off the liquid and add sulfuric to drop the PH. You should notice the esters now! That's your next thumper juice for the next run. Any leftover goes into the dunder pit, check the PH! The stuff at the bottom of the carboy can be brought to a neutral PH with water and THEN acid and added to the pit. Water THEN acid! Use dunder from the boiler only for the dunder pit from here on. Distill the second round with the boiler full new wash plus live dunder, the treated thumper juice in the thumper. Do this until you have enough of the high abv low wines to fill the thumper halfway and then do a slow distillation with the lower abv low wines and live dunder in the boiler, high abv low wines in the thumper to try to get the highest abv rum possible. The higher abv the better. Discard fores, and Collect everything into 2 containers. Collect heads to late hearts, stopping before any tails, into one carboy. Collect from then until down to sweetwater. Save the high abv half for the final distillation. Put the lower abv half into the boiler for the next strip. Toss the thumper and boiler juice from this distillation. Do this all over until you have enough of this high abv rum to fill the thumper halfway.

Make more low wines by fermenting molasses and adding live dunder before the strip, and treated thumper juice in the thumper just like before until you have enough of these low wines to fill your boiler. Add plenty of live dunder to the boiler to lower the abv to a safe level, but on the highest safe end. The thumper gets the high abv rum filled to halfway, plus some thumper juice. Not too much juice, you still want the abv to be really high. Add sulfuric to the thumper right before distilling to drop the PH as low as you can. The distillation should be a slow run, with a long warmup before you start getting to collecting temps. The rum coming out will be very high abv and will be absolutely ridiculously chock full of esters!!! I always collect in jars, I can't trust myself to make cuts on the fly. I also put coffee filters on my jars and let them air out overnight or longer before I make cuts. The amounts of esters could possibly overwhelm your senses more than normal, beware.
The new rum will be extremly potent, in strength and to the senses. I like it as an additive, but on it's own is excellent when proofed down to a sane level. Or not!
