so I started a peach must on 7/20, I had 25lbs of fresh peaches that I smashed with a food processor, 12 lbs sugar, 14 gallons well water, and
lalvin ec-1118 yeast, it formed a thick cap in 2 days, but now it's been 17 days and is not showing any sign of dropping, haven't checked the sg, but smells like strong alcohol, I'm thinking about running it anyway.
what causes the cap on my "must" to not fall after 17 days
