Hey Y'all

It's been a minute but now I've returned here to learn more. I bought a 35L Digiboil and two 7.75 us gal. stubby kegs, a 60,000 btu burner, a 2" x 12" copper pot still head and I built a liebig condenser with 1/2" vapour tube 42" long into 3/4" x 36" long water jacket.

I ran wineo's plain ole sugar wash: pH crashed but salvaged. stripped it and got 3/4 gal @ 40% clear as water. set aside 1/2 gal of the leftover yeast.

I made 5 gal wine from my home grown grapes, stripped it and got 3/4 gal @ 40% crystal clear. saved leftover yeast and 1 gal backset. froze the stems and skins and gonna try grappa later when I've made more sugar wash.

I ran pugi's rum wash: WOW my house smells like a cookie factory. I scaled pugi's recipe down to 5 gals, followed it to a Tee. This wash ran vigorous, thought the airlock was gonna blow! today 10/18/24 the rum wash finished in 48 hrs not dry, hint of sweet, but not sticky. gonna crash this outside for couple days, save some backset then run it with low wines from the sugar wash. Then I'm gonna pretend I can make the cuts.

my time lurking here has been invaluable and I say BIG thanks to HD forum contributors for sharing your best practices.

seems Rum is the potion of choice in our house, so I'll be trying my hand at it. wish me luck, dudes, I'm gonna need it!
