I am curious what your friends and family prefer when it comes to clear spirits other than the typical vodka, gin, neutrals. years ago i made corn, all barley, pear, plum, grappa ( old chardonnay distillate) and honey spirits. Most of my friends that tried them liked the pear and plum for the fruit character but coming in 3rd was always straight corn (20% barley for conversion). I have been away from the still for years now but in getting back to it i am curious what white spirits your friends prefer?

Dougmatt's panela/molasses recipe has been a hit around my house for the holidays. I'm really new at this, but that's better than anything I've ever bought.

Some folks don’t like the taste of rye but it is also my favorite. I follow that with 2nd and 3rd generations with corn.

i also like rye. do you think most folks are using malted rye , unmalted or a mix of both? i am planning on using malted and maybe some very light golden specialty barley malt.
i will check out the dougmatt panela rum recipe as well. Right now im just set up with 2" x 24" copper column on keg pot still.
