Recreating Mash Bill #1

Well guys, I did my first “large” mash last week with the intent of recreating a similar bourbon grain bill as bourbons like Buffalo trace, Eagle Rare , E.H. Taylor etc..

Grain bill for a 58 gallon barrel is:
1) 55lbs of crushed corn
2) 15lbs of malted barley
3) 8lbs of rye
4) 40 gallons of water

Did the large mash recipe that Crow gave a tutorial on within the tried and true recipe section. Thanks Crow.

All in all the original gravity came out to be 1.06 and after 7 days the final gravity finished out very dry right at 1.0 (maybe a touch under honestly).

Started straining it all out this afternoon after work and I’ve gotta say, holy cow. No wonder people hate doing large all grain mashes (all my other all grain batches have been roughly 15 gallons at a time). I used a fruit press with brew in a bag bags to separate it all. Anyways, letting it all clear so I can strip it all this weekend. Have a 2 gallon BadMo barrel waiting to fill with the final product.

Nobody ever said making good liquor was going to be easy. But, it can be streamlined.

A mop bucket with wringer is pretty quick. Getting most of the liquid out using paint strainer bags. Then I use a heavy equipment funnel (found at Walmart) to funnel the cloudy mop bucket contents into to clear. The funnel is wide enough I can pour from a 5 gallon bucket. Has a screen also to help with the errant solid that finds it way into the mop bucket.

Haha i did exactly 2 AG mashes before I said f this noise and went all in on steam injection. Sparge and squeeze... no thank you.

Steam was also a quantum leap forward for me.

I’m currently running the classic keg still. But starting to think seriously about upgrading to something different. Any suggestions for steam stills of similar or larger size?

Luckily we had some crappy weather this week en so I was able to get 3 stripping runs and a spirit run all done over the 3-day weekend. Was able to fill the BadMo barrel and got about another 1/2 gallon aging on oak in glass right now at 58%.

White dog tastes good. A little sweet at first and has some spice at the end. Im hopeful the sweetness will mellow a bit over time on oak. I took a small pint sized jar of white dog and nuclear aged it with some charred white oak. Tasty! Can’t wait to see how it ages out in the barrel!
