So, this forum requires new community members to write a short introduction post in this section. I've been a homebrewer since 1999, but lately being diabetic has shifted my interests more into spirits - primarily rum and rye.
If some of you are familiar with the sake brewing community, you may recognize my username.

I mention sake here because I noticed a thread about it in another section of this forum, and I may be of use to answer questions for anyone who is interested in that aspect of the homebrewing hobby.

If you can make beer or a whisky wash, then you already have most of the skills required for making sake.

At the end of the day you're still just converting grain starch into sugar, and then into alcohol.
Thank you all for the warm welcome!

I followed your procedure a few years ago and made a fine batch of Sake. You might remember me, my wife and I stopped by your house several years back.
