hi HD .
first of all i must say that i'm a native french canadian, so i was raised in french, study in french, work in french, brew in french, distill in french and drink like a french canadian.(will lets your make your own search on that point)
i have a fonctional general english, but i appologise for any misspeling or weird syntax or if i did nt understand when use specific distillation english acronyme. ( Damn how i screw my head to find what you refer at when you speak of YLAY)


With that says, i m homebrewing for almost 25 year now, start with beer kit and rapidly switch to grain, just remind me how it was hard to get hand on good malt at this time. so atempt to malt my own, what a PITA and a waste of time and money that i didnt really have at this time, for, a not bad , but not good at all product. So i get an empty beer keg from a delevry truck driver and build my first still. not really good (what you put in is what you get out) but as a youg man boose iswhat it is. so i start reading and i read a lot of book, you know that thing made of binded paper, and i find my new BFF Rum. no grain bill, no malting, no mashing just melasse, water and yeast. AMEN.
by the time i learn how to turn rum into neutral sprit, and so far neutral spirit to gin and liquor. play aroud other sugar types, maple syrup, honey, agave. came to fruit juice, in various form, wine, fortified wine, cider, apple jack, with that came my BFF girl friends Brandy.

When your brother who have alway ask if you have somthing else to drink that your moonshine , start calling to ask if he can pass pick some botle on the shelf you know that you are doing good. bro finaly ask for some whiskey so i reconcil with grain but mainly stick to beer.

years have past and im totally settle, we baugh a land, and between our vine, the orchard, the mapple grove, all the berries, and other grow, except for special occasion the only grain i see is for bird feed.

Rum and Brandy get maried.
