White Dog is not so bad after all

Here I am sitting with a glass of Green Diamond Whiskey White dog in front of me, and I dont think it’s all that bad! It’s after all my own. :)

Never was much for drinking new make spirits but I just finished blending my cuts from Saturday’s spirit run. 36,5L/10g distilled, 15L/4g collected, and 6,75L/1.7g made the hearts cut, at 77% ABV.

The Green Diamond White dog smells herbal spicy, dill, maybe mint. There’s an element of violets to the scent that I really appreciate. The taste starts surprisingly smooth, but then builds to a warming bite. There’s a long lingering aftertaste of spearmint on the tongue. Lots of spice in the taste, with some green tea notes along with the black pepper. The fruit is there in the background, let’s hope aging will bring it forward more. Delicious!

I wanted to thank all of you who provided help, input and morale support with my many questions. This was only my second Whiskey spirit run, so a big build up of expectations and a wee bit of angst has just been released. I am happy with my cuts, I dared to be more brave with the tails this time. I am starting to really understand my still now, which help predicting and planning a spirit run. Skål!
