A bit about myself: I'm living in Quebec. Full time wind turbine technician, part time firefighter. Me and my wife run a horse stable at our place and she gives lessons when she isn't doing her real job.
A bit about my skill level: I used to make beer but I just started this craft this year and I'm making my second sugar wash this week. I'll be running it through a 30 L stainless alembic with a 2 foot copper column from northstills, last time i got a result of about 84% that tasted a bit off but I think it was some really old turbo-yeast. This time, I'm trying bakers yeast and if it goes well, the only thing I will be adding to the finished product this time will be an infusion of woodruff and then watering it down to about 30%. I am still figuring out this craft but my goal is to start distilling mead that I make from my beehives and converting my alembic to run as a pot still by removing the column. Right now I'm just trying to get really clean, high-test runs with simple an minimal ingredients until I understand the process a bit more. Lots of sterilizing equipment and washing my hands, temperature management, many many cuts, and note-taking. I'm looking forward to seeing what I can learn from this group as I go forward with this project.
