I was just gifted 2+ gallons (its in a dozen or so various sized jars) of sorghum syrup. Has anyone got any experience using Sorghum Syrup (aka Sorghum Molasses) for a rum like spirit?

MODS: I posted here because it is often known as Sorghum Molasses, but not technically a rum. If you need to move this post to another forum, please do so.

I took 1 part syrup mixed with 4 parts water and measured with a brix refractometer to estimate ppg (360).

I'm thinking of this recipe for a sorghum rum:
2gal/7.5l sorghum syrup (there may be up to a quart more than 2 gal - I'll use it all)
1gal/3.8l rum dunder (1.028)
7gal/26.5l water
1/4 c boiled yeast

Should get 10gal/38l at around 1.075. I'm guessing it will finish around 1.015, or about 8%
Pitch bakers yeast and hang a teaball of shell grit in the fermenter.

Strip to 25% then run thru 2 4" sieve plates with VM head. I may add a bit of rum feints to the low wines.

Age in a badmo clone w used barrel head.
