I'm trying to replicate the 1855 Pontarlier recipe. At first it seemed ok. Taste was good. I could taste Anise and Fennel although light. The color was a perfect green. It louche well.
So I bottled it. At first everything was ok.
After I opened the first bottle on the second sampling it turned a light tan. It will not louche and the Anise and Fennel is almost gone.
It is smooth,light, drinkable,just not Absinthe.
Anybody got any ideas?
