It’s interesting that the article does not mention the use of stillage, backset, in the Sour Mash process and how it re-introduces EC into the next fermentation. It sounds like the sour mash process could accumulate EC in the Whiskey over time?

Interesting point. I believe sour mash is not common in European whisky process, it is mainly used in bourbon and some Canadian whiskeys...
