I wanted to share my experience because I know historically a lot of people ask "Can I run this ferment I forgot about/got to busy to run after X months?"
Around Easter 2024 I had a free afternoon so I brewed an all-grain whisky with Golden Promise as a base, a little honey malt and a little oats. Then of course life got busy and I couldn't get back to it until this month.
About 22 months in the fermenter. On the grain, not airlocked, just flat plexi on top. I smelled it occasionally and it never smelled bad. The pic below shows what it looked like right before stripping.
Did I taste it? Yes I did. Slightly sour but nothing off. I wouldn't tell anyone else to try it, but it didn't kill me.
Did I run it? Yes I did. Stripped on the grain with steam then a slow spirit run of three strips combined. High wines are promising! I got a good sized hearts cut and no off flavors that I can sense.
It'll go into a used Bourbon barrel at a bit lower proof next and may sit there until I have time to make something else to replace it with!
YMMV, but I'm optimistic.
