Any Cold Fermentation Mashes i can try?

I live in a colder area and dont want to spend a ton of extra stuff like heaters etc for small scale batches.. was wondering what sort of mash i can make that doesnt require a lot of heat like Rum or Tequila. As i found out the hard way with trying to do a rum mash at 60 degrees even with a space heater
