Hello all,
I have regularly been making wine at home out of any fruit I can get my hands on (except grapes lol) for the past 26 years in the PNW area of Canada.
I have been thinking about turning some into brandy for quite a few years now, and had rum thoughts about a decade ago when I saw some sugarcane being crushed for juice at a shop near me.
A frequent visitor of this forum at times over the years, I am excited and ready to get serious on this expansion of my old hobby.
From my reasearch so far, I am looking at a pot style still for my purposes, hoping to construct my own and learn how to use it properly. Not a fan of neutral spirits myself, hoping to create something flavourful.
