Hiya Distillers. I just wanted to write a quick review of the Fermentis SafSpirit C-70. I've used it now for 7 ferments and I am happy with the results.

For rums I have in the past used Hornindal Kveik and DistilaMax RM. I love Hornindal but the supplier I used is always out of stock of my preferred brand and the other Kveik yeasts a stupidly expensive. The RM was on the other hand a little of a let down. I was not happy with it. The yeast was fnicky and it didnt enjoy the temperature swings in my distillery. So when I now was planning my Summer Rum project, I was on the lookout for a new yeast.

As I am very happy with the dry yeasts I've used so far from Fermentis, I have been looking at their yeasts on offer. When my LHBS was giving a promotion on Fermentis SafSpirit C-70, I decided to give it a go. It's said to work well with sugar products and is recommended for low and medium gravity washes. Since I will not be fermenting anything above 1.070 I felt this yeast would be a good fit. More info here: https://fermentis.com/en/product/safspirit-c-70/

I've used the yeast now for 7 fermentations. One low gravity wash with dark muscovado sugar. Three all molasses washes and three all table sugar washes. All fermented dry without any fuzz, most activity being concluded after 3-4 days after pitching. I used heat belts in all fermentations to avoid temperature falling below 28C, and 28C seems to be a very good spot for this yeast. It's a little slow to start but then it chugs away. It's not one of those volcano yeasts that gives off a big show, rather it just gets on with business. It leaves an aroma that is slightly fruity, but C-70 is not an ester producer, if that's what you're after. I've had a lot of problems with falling PH but with C-70 this never seemed to be a problem.

As I don't find much written about C-70, I thought I just write a short review on it and give it my recommendation.
