Carbon dioxide

Carbon dioxide is an atmospheric gas composed of one carbon and two oxygen atoms. One of the best known of chemical compounds, it is frequently called by its formula: CO₂

Carbon dioxide is given off in very large quantities during fermentation (approx. 136 litres per kilogram of sugar). It is usually vented through an airlock.
