Breather barrel

From the Caribbean rum producers, a breather barrel is a barrel that is filled with a lower proof (20-40%) spirits to extract wood flavors. This lower proof spirit is then used to proof down newmake spirit to add oak flavors and a smoother profile. This gives the newmake spirit a more aged taste profile.
For safety reasons keep the proof at 20% or higher. This will prevent the growth of biological substances.
