Where to start.. I grew up on the Chesapeake Bay in MD and the NC coast. I now live in the coastal Pacific Northwest. As an avid outdoorsman, I've always been big on self reliance. History and culture are also of importance to me. My reasons for entering the world of distilling are just this.. Self reliance, our history as well as the history of the rest of the world and their culture. I also wish to create high quality spirits for myself. This endeavor is not about saving money and of course not about making money. Don't sell, don't tell. With this, I would of course love to see this legalized. I do feel that a permit could be acceptable, where we would have to take a small exam in order to have a home distillers permit. We're not going to get legalization in the US for free (laugh). So.. Let them test us to ensure we don't poison or burn ourselves up. There are so many normal aspects of life which are more hazardous.
If anyone knows how to make Mahia.. Please contact me. We have a fig tree and are really interested in this piece of Moroccan culture. For now, I'm sticking to my favorite. Rum.
I'm starting off with an 8 gallon convertible pot/reflux still. I figure it's a safe way to enter this world, while learning what best suits my needs moving forward. I do have a bit of brewing experience as a foundation.
