So typically a longer ferment is only good then, there's no downside to a multi-week ferment?

I have some bourbon wash...5 gallons...10 lbs cornmeal, some rye berries and wheat flakes. And a sugar shine, 9 lbs sugar + 1 lb raisins.

Both using ale yeast.

How long to allow fermentation?

How many days before a typical 5 gallon mash has the max alcohol? Is there a point where it's still bubbling but no more alcohol is being produced? Or is it best to allow for a full 7-10 days for the most alcohol? The book I have (and granted it's for a 1 Gallon mash I times it by 5) says 2-4 days f...

Success with small oak barrels?

I have 3 L of whiskey aging in a 1 L and 2 L barrel but I know from reading this will age quicker than a 55 gallon barrel.

What is the minimum size barrel? I have a 5 gallon I want to fill. What kind of aging times am I looking at?

So about 1.2 gallons of initial run turned into 1/2 gallon after the 2nd run. I tested some of what I thought was still hearts and it was only 10% alcohol so I knew I had gone a little too far.

I cleaned out and filled a 2 L oak charred cask for aging.

I ordered a pump and an ice maker. The still is going through a TON of ice for the 2nd distillation.

If I turn up the heat (doing the 2nd run now) it turns from drops into a stream.

Hi guys Thanks for the feedback. It is a 5-gallon copper pot still with a copper condenser. On the initial run the production starts before 80 but then tops out and stabilized at 80-81 over time and then slowly rises when you hit the tails. It took over 10 hours to distil the first run and I got aro...

1st vs. 2nd distillation temps?

The majority of my hearts from the first run came around 80C but when I put it all back in for the 2nd run the initial production temp is MUCH lower. Is this normal? Should I stabilize it at the lower temp as long as the drips are coming at the right speed?

Doing my own research I found one that used 3 lbs of grain per 1 gallon of water, so I times it by 5 and did 15 lbs of grain and 5 gallons of water. 1. Do you distill the yeast too? My recipe says to.
