Drove home the third and final bung today in my quest for barrel aged whiskey. Three Gibbs 15 gallon charred barrels put to bed. The last barrel is gonna be the best I believe. I distilled down to 100 proof on the first and second run and had more feints to add before distilling. I had distilled to 120 of the previous barrels. Taste more like whiskey going in.

I added a gallon of blackstrap to the fermenter a week or so ago along with the usual sour mash stuff. May be running it later this week, I will take backset from that to start a rum run, and will add more blackstrap on each run until I find my happy place with the ratio of blackstrap to sugar. I got a good ph meter and checked the current run (ph is 3.75) my well water is 5.95 and appears to be iron free even though I live in the heart of red clay country.

Life is good.
