Here's a simple receipt to make a good apple "eau de vie"
I bought 24 l apple juice, the cheapest at Aldi (30 cents a liter), without dye nor preservative. On the packs was indicated 10% sugar...
I decided to add sugar to increase yeald : calculate that I could add 3600g sugar maximum, so I decided to add 2400g to get 20% sugar.
Added 7 g of "aromatic" wine yeast (Bioferm aromatic, at brouwland.com).
Let ferment about 10 days... that's all!
Then run in a pot still (or reflux without packing) to get 70%ABV. You would get a nice apple taste and smell.
At this stage, 3 possibilities :
Dilute and drink as it is (dry)
Dilute and add some sugar (sweet)
Let it age on oak... and you get Calvados

Reflux : 104 cm (41 inches) column 54 mm (2 inches) diameter withh SS scrubbers packing.
Potstill : 40 cm (15 inches) column 54 mm (2 inches) diameter without packing.
