I made my first 5 gal batch of Rum...6 lbs Brown Sugar, 60 oz. molasses, 1 packet LiquorQuik SuperYeast X-Press. It fermented out in 4 days. I ran it through my pot still, burned some oak and let it sit on that for 2 weeks. I carmalized some sugar on the stove and mixed it in. Then I bottled it. I opened one of the bottles and I get a strong smell of yeast. It doesn't taste bad, but I am not real sure about the odor. I have another 5 gal that I am going to run tonight and was looking for advise on how to get rid of the yeast smell.
I also have another batch still fermenting but instead of the SuperYeast I used 3 packets of EC1118. I was wondering if the smell came from the SuperYeast.

Not sure if I figured anything out yet
I am going to run the batch made with SuperYeast but the EC-1118 batch is going to take at least another week or two before it is ready. Hopefully the yeast smell won't be there after I run it tonight but we will see.
