according to the calculators on the site my wash is going to have 12.7% alc.
the brewmeister wine yeast is capable of more! 20% max
is it possible to knock it up, its already bubling 3 days!
if yes how to do it?
i used 8 liters water instead of topping up to 8 liters
just (carefully) ad 500gr extra sugar to end up with aprox. 18.5% ?
i used 2 kgr sugar + 8 liters water = 9.23 liter wash
sg should be 1,083 and produce 12,7% alc. according to the site
it should be: 2.5 kg sugar made up to 8 liters should give a wash of 18.5% sg 1.1
any advice appreciated!

don't do a crime!

No need to push the wash over 12%, even though the special yeasts can theoretically go up to 20%. You'll waste lots of time waiting for the fermentation to complete and create alot of funky stuff that takes some effort to remove. In conclusion you won't win in time neither in productivity.

Adding more sugar late in the fermentation is a trick some people use to increase ABV. The theory is that this stresses the yeast less that starting with a very high gravity.
I believe the parent site has instructions on this, but its pretty simple. Just don't pour sugar straight in to the fermenter... Dissolve it into a syrup and add it when its cool.
