shelf life
i was wondering about how long would a peach liquer last before going off? i mean flavouring by having peach slices covered in suger and neutral spirit, therefore producing a syrup flavour i can add to my neutral spirit.

1. I would fill 1 liter jars with peach slices, adding other flavours(experiment) i.e. anise, vanilla, orange, almond etc.
2. Cover with 40 proof vodka and seal for 6 months.
3. Strain/filter the result and sweeten with sugar syrup.
If you want 40 proof peach liqueur, instead of 40 proof vodka, cover with ethol alcohol, reducing to proper strength at step three.
Shelf life; you will have consumed before it is a problem, but I would think years.

I'd only follow that if I wanted wine. I mean come-on... 40 proof??? Isn't that the proof you try to acheive during fermentation ??? BEFORE you distill?
put your fruit on 100-120 proof spirit, and let it soak for a couple months.
Pour out the liquid into another container(and save it), then cover the fruit in sugar and let it sit about a week, pour the syrup into the spirit that you saved, and add more sugar to the fruit, keep doing this till you reach the flavor you want, or until the fruit doesn't release any more juice.

Sorry, that should have been 40%. I make my vodka by mixing 100 ml. Ethol Alcohol with 137 ml. distilled water.
