Ok guys I have mixed up my first batch of UJSM. I followed all the rules and it was bubbleing great. After 5 days like it said I ran it through the still. It wouldnt produce a drip till 185 deg at the top of the column. Was it not done fermenting and in turn wouldnt produce drip untill it hit the water point?

water boils at 212f @sea level...

It'll start sooner when you have higher proof. In other words when you've added feints to the next run.

But if you're concerned that it ran too hot, run the pot slower. Or once you start to get distillate emerging, cut the heat back and try to maintain the boiler temp instead of increasing it.

I know water boils at 212 at sea level but I am at 5000 feet. Also I ran the still the same way I have on the last few good runs. I was just wondering if the alcohol content wasnt high enough in the wash yet?

what was the target expected from the wash how much abv?
Did the fermention complete ? Did it taste Sweet ? Sour? did you check the Sg of the wash before running ? Maybe it wasnt complete and the alcohol content was on the low side ... temp of the wash during the fermentation process will determine the amount of time it takes ... If it was on the cooler side then it would have taken little longer to finish .. warmer can be a good thing to a point too warm and you can start to get off flavors and kill some of the yeast ..
