apple flavoring???

Post by kripto420 »

I had some shine a while back and it had a slight apple flavor to it. How would you get such a flover? Can you throw some apples in the boil or would you have to ferment them in the mash? Any suggestions???

This is one way to make some great apple shine.

Score some apples... crush them up and press them to collect as much of the juice as you can. A cider press or wine press works well. You could ferment on the pulp, but I think its probably better to get the juice without the seeds and stems and skins. When its all done fermenting and everything settles put it in a still and run it hot and fast. If you have a keg boiler still like many here, do 2 or 3 ferments and single runs. When you have a couple or three gallons of the clear low wines, but them back in the boiler with a little of the wine. Run this one slow. take the hearts out of the middle and dilute to taste. You can cut it with clear apple cider and have 80 proof apple juice. Add some oak... somewhere I heard about taking a piece of a barrel mill oak spiral thats been soaking in cabernet, rinsing it off and adding a little oak flavor is good...
When you do that, be sure to hide some bottles from yourself and forget 'em. It'll be a nice day when you find one.... Blanik knows....
