I have 5 gallons of grape brandy (65%ABV)that I distilled about 6 months ago. I blended the cuts together thought it tasted real nice when diluted to 40%.
I put in about one and a half cups of Stavin toasted french oak cubes and let it sit for a few months. Now I find that it's a little too oaky and tastes somewhat harsher than it did before. Not near as pleasing to the taste.
Can I redistill the brandy after it's been oaked and possibly make it better?
Any other suggestions.
I use a pot still: 15 gal stainless keg with 18" of 2" copper and a 1/2x 32" water cooled condenser.

Re: Redistill Brandy?
Kayos, don't forget to add water to lower the ABV to an acceptable low wines level. Redistilling at 65% ABV seems to change how my pot still sends across flavor. I get better results from adding water to a redistill run that start at 40% ABV low wines input.
On another note, I have noticed that adding fruit to my last spirit run can overpower the brandy flavor with real fruit flavor... the flavor of the grapes are changed by the yeast during the fermentation process, (wine vs. grape), this is good in peach brandy but personally I don't care for it in grape brandy.

I like useing wine/wash to cut with ,saves more of the flavor.you can add juice /fruit. but that will give more of a fruity flavor.
