I managed to get myself a 12kilo box of dried figs.
I'm wondering what I can make with them? Not sure if I should chop them up and ferment with them or macerate with them or what?
If you've got ideas or recipes you would like to share that would be great!

I got alot ( for me )of rum to still.
I'm going to try and char up (with the torch) some dried appricots for aging one of my batches.
Will you please try that with a fig or two and see how that comes out?

lwtcs I don't have any rum on the go and I've got more rum than I need at the moment so it will be a while before I try something like that. Are the apricots and figs the only things your chucking in your rum for aging or are you going a bit of oak too?

Were the figs you used pretty sugary? The ones I've got are very hard and pretty sweet.
I don't know anything about wine.....does it matter what type of wine? is it ok to chuck in cheap stuff?
I just need to get some neutral going!

Hey SuperDavid, don't think it matters if they're sugary and hard - the sugar will dissolve into the wine and the figs will soften. I used a homemade Shiraz for my base and it was a pretty intense red. As long as you can drink the wine, it'll be fine. Any friends make wine? Cheers, bd.

I have not tried the dried appricot yet or the chared appricot. But I will. And if I got my hands on some dried figs or dates or what ever. I'll be trying all of the above sooner or later.
I am very currious to see how well a chared peice of fruit will impart color.
