Distilling in Australia

What's the commercial distilling industry like in Australia?

I guess I'm curious what it takes to start a legal one down under.

I think we've all thought at one time how good it would be to open a legal distillery, basically there is massive red tape and i just did some quick reading on it. There are 2 new ones that have opened in WA in the last couple of years following on from the micro brewery craze I guess, so it can be done. You just need a pretty good lawyer friend.

Just found a Distillery in Bathurst NSW. They produce Schnapps and a Gin using all Aussie botanicals except Juniper Berries. I havent visited it as yet but it is on my todo list in summer, I believe it is owned by a Scotsman

The one down south WA has an imported German master distiller... unfortunatley there doesn't seem like theres much local talent when it comes to professional distilling in Australia.

We have the Great Southern Distillery & White Swan distillery here in WA, i'd be interested to know what other ones there were in Australia.

There is another in Thredbo in the Snowy Mountains "Wildbrumby" schnapps this is run by an Aussie bloke, Brad Spalding from all accounts from some mates of mine in Jindabyne it's not bad stuff

there is also another one in the swan valley called the Great Northern Distillery

Yairsss ublong, they do have a great single malt and also an excellent Gin, flavoured with Mountain Pepper (Tasmannia lancelata). $16.50 for a 150ml jar, but worth every penny for the experience. I need a contact in tassy to send me some of those peppers.

Well I've licensed a distillery (DSP) in the United States before and the pile o' paperwork was amazing. But I'm not afraid of paper anymore.

I AM however afraid of a bill in the US legislature called Waxmann-Markey, aka cap n' trade. If it passes (today?!?), it will destroy the US economy and crush the worlds economic stability.

I developed and built an alternative energy distillery for Sunshine Spirits, Inc. and have technology that can plunk down anywhere. However, I'm looking for fertile ground to put it on. I'm getting awfully uncomfortable in the USA these days. Some of the goings on leave me unsure of what to expect...

I've been to Australia as a child (I grew up in PNG) and love the place, the people, and think I might be able to make a home there. I'm a biochemist and have certain skills that were on the embassy's list of desirable professional skill sets. However, I want to chase my dreams and continue developing distillation technology and trying to make a tasty dram. That's the origin of my question for this thread: I'm wondering if you need another master distiller down under.

It looks like I will be shortly killing/ending two of my family's corporations here in the USA due to the evil legislation coming out of washington, DC. Considering that I lost my research day-job last fall due to economics, I'm trying to consider my family and the long term prospects for doing right by them.

I know that the grass is always greener on the other side of the fence, so I need to engage in due diligence and look before I leap.

Might wanna grab that opportunity while it is going, even if you do not end up staying permanently. Permanent residency/citizenship in Australia is usually very difficult to get. Pretty sure you are also allowed to keep your USA citizenship, ie dual citizenship, so you can get the best of both worlds.

But if you are coming here to escape carbon tax/trade systems, you will be disappointed. Some variation is going to be introduced here, and everywhere else, before too much longer.

And there is plenty of room here, we can always use another master distiller/biochemist.

Hi Blanik, the pepper berries you mention tasmania Lanceolata are also here on the mainland. frequent chiefly in taller forests , on cool moist slopes and in gullies, lower montane to subalps. Flowers sept-nov. I collect the berries in may-june, use them in my pepper grinder, never thought of using them in a Gin type process.
I only collect what I think i'm going to use, I have about a 1/3rd cup spare. pm me iff you want them otherwise you will have to come for a visit next year and we'll go hunting.

BTW, I'm certain that although the records say that my wifes gggp stole a loaf of bread, I firmly believe that the buger was a mass murderer....... but I digress.

I just re-read your post MM and I really can't think of a nicer place to visit. I did a lot of work in those forests and loved every minute of it. Mind you, it took me some forty shitty years to find a job that I actually loved .... but again, I digress.
