Questions about my sugar wash

First off this is my first try at distillation. So constructive criticism is encouraged.

Today is day six of my wash that includes:
6lbs sugar
1 large squeezed lemon
6oz tomato paste
5 gal of water
21grams of active dry yeast

Process:
Dissolved sugar in a gal of water, squeezed in lemon.
Poured that into the fermenting apparatus, then added tomato paste and water, while aerating profusely.
Finishing by filling to the 5 gal mark, and aerating more.
Made sure temp was around the low 90s then added yeast, and stirred gently

I tasted some of the concoction today and it has a lemony, champangey, flat beer kind of taste, it is also bubbling at about 1 to every 6 to 7 seconds.
My questions are: Is the taste suitable to the time period, and when should I put this sweet mixture of love through my still?
