I read this and found it interesting. It is probably in this forum somewhere, but I wish I had seen it earlier. I know it's just common sense.
You can adjust the amount of sugar according to the type of wine you wish to produce:
SG for dry wine 1.085-1.000
SG for medium sweet wine 1.120-1.140
SG for sweet wine 1.140-1.160
adjust sugar for wine sweetness

I dont see it working that way but ok,, two ways to do it,1) add potassium sorbate/potassium metabisulfite (stops yeast) then sweeten or
add a little sugar at a time ,untill yeast die then sweeten.
(this should have been in wine/beer)
