'Round here bear is mostly used in soups and stews. Roasts are ok as long as you have a BIG drip pan for the grease. Haven't had any in too long.

We make lots of bear sausage, brats and summer sausage. I think that is the best way to enjoy bear meat.

A week ago, there was a nice spiker out back eating the acorns falling (by the thousands) from the big ol white oak in the yard ....I was tempted to grab my '06 and tag him, but mrs hooch likes to watch them out there....says I should be takin "wild deer" instead.

When i was a young man in East Texas I used to hunt ALOT of squirrel and I'd get a White Tail or two each year.
Now I'm middle-aged and live in a huntin' Mecca, yet all I do now is fish and hunt bird.
We have bear and mountain lion here, but i refuse to hunt critters who's reproductive strategy is to have few young and give them years of care.
I've found I love workin' with a good dog to hunt bird along the wood-lines around here. I've also found I love eatin' grouse and chukkar. Chukkar can be passed as chicken. I'll make green chili "chicken" encheladas and share 'em with my neighbors... when they ask why the chicken is so good, I tell them that it's "free range". (Heh.)

I take the money that I would normally spend on fuel, guns, vehicles, beer, mixed drinks, hangover medicine, time off and cabin rental....and buy half a grass fed cow each year. Pre-butchered and packaged.
I always make it a point to go "Kerpooooowwww" when I finish my name....
Then I take the rest of the money and go strip clubbing in Canada!!! Yeah Baby!!!!
Seriously though, its always nice to get something on a good trip out.

To theholymackerel: A little information that may surprise you. About the time you did your squirrel hunting in East Texas just about every male here also hunted them as you probably remember. When squirrel season opened, we would have done better to just close the high school. 80 to 90% of the boys were absent. And I did my share of hunting them then too.
Now, it is different. I was talking to one of our State Game Wardens who is a member of my lodge the other day, and he told me he cruised the woods all day opening day of squirrel season, and only found one squirrel hunter. It seems hardly anyone hunts squirrel anymore here in East Texas. Why? I have no idea.
The White tail deer is still hunted big time.
