Funny Taste
So I ran about 4 gens of UJSSM here 4 months ago or so. Loved the stuff white. Figgered if it was good white, agin would only make it better. So i put it all on oak sticks. I kept tastin and botherin it, cuz im impatient and all. Was never satisfied with the taste. Hearin from folks here, i was told to just let it alone and it would get better. It tastes like whiskey, it just has a goofy flavor that sits in yer mouth a minute after you take a pull. I wondered did the flavor come from the wash, mistake in my stillin, or something with my aging. Again, leave it alone. oak flavors come out at different times and flavor is always changin. Well last night i wanted a drink. I found a couple shots of the whitedog hiding in me likker cabinet, along with about a shot of some Basil Hadens. I dumped the 2 together on some ice. when i took my first sip, i almost shit. It tasted just like the stuff i had agin in the basement.
So this leads me to believe that it isnt the aging that is giving me this taste. I did a really long slow run with my detuned reflux, some of you may remember i did a play by play of this run on a thread here. So i dont think it is in the stillin. The flavor is odd, but similar to a flavor that i had back when starting out with sugar washes. Im thinking this added flavor is coming from the added white sugar. Am i crazy? I want to do a all grain this winter, at least a thin mash with very little sugar added to see if i can get rid of it. I dont like it.

no i cant. its like nothing i can describe. the closest i can come is sugar heads/tails. but that aint completly right either. i just got a feeling its something to do with the added sugar. it dont have any grain flavor to it. The funny part is, i didnt notice it drinking it white. but after aging it is noticeable. But after mixing it with a shot of commercial, i dont see it as coming from the wood either. it dont make no sense. Got me puzzled.

I have some white dog that I thought was pretty good when I first made it, but after a time it's changed for the worse, especially if I dilute it with some water. So I sip it full strength and it's better, but not great. bd.

One another note, just stuck my nose into a jug of white rum and it smells like creme brulee, or something. Tastes better than it did a month ago. Nothing in it but molasses and sugar. So I guess what me make is constantly evolving ... I hope

If you mixed the Basil with some of your white dog what probably happened is you got some weak flavor as your white would have diluted the Basils.
What it sounds like is you need some more time on the wood to extract the flavor and essence.

I figgered it just needed time. But thought it was really crazy that a little white mixed with a little commercial tasted the same as my ageing stuff. Once again.... I may be getting impatient.

i have made a single grain run,twice through a pot still, second time slowly ,collecting in separated bottles , taking the middle (hart) ,dilute with good water, and
well, it tastes slightly of grains, not bad but not nice either,i should probably add oak to it, i just thought it would taste better.
actually i have several bottles off non appealing fruity taste in my cupboard ,some have a bitter kinda aftertaste,probably better when mixing it with a soda
i want to drink it on the rocks, or add only tiny bit of water to it.

this stuff tastes really good/ smooth white. no question in my mind it was gonna make good likker. now its got me wondering

I bet it will come around with more time MK.. I have noticed mine goes through lots of changes with time. I have some now that I am trying to stay away from until it is a year old... dont know if Im gonna make it though..

The dusty bottle in the corner
So.... Adding to this story. I ran some blackberry wine off fer brandy last fall. Got about a liter of hearts. Put some oak sticks in it and let 'er sit. I tried it a few times a couple months into aging. Thought i really screwed something up. So i put it in the corner of my likker cabinet out in the geerage and fergot bout it. Marked it down as a failure. Well......... I was in the garage yesterday messin round, and that bottle caught my eye. Dust as hell it was. coffee filter over the top. I had to give it a sip. What do ya know. It had the best smell, and the smoothest taste/flavor. I just about lost it! Called my buddy, who drinks E&J like a fish. "Get yer ass over here, got somethin fer ya!" What do ya know. He asks, " what did you do to it?" My answer was, "forgot about it"
So, moral of the story. If it aint quite right, dont get bent about it. Just forget about it. i now have faith that in about a year my UJ will come around.
