my only comment is that I use the Fermax from Crosby Baker. It calls for 1 tsp per gallon. I just got some really positive results from a gerber and a WPOSW using this product and this measurement, which is a bit more than a gram per gallon. Of course the recommendation is based on using grape/fruit juice for wine making. my thoughts is that there is obviously more nutrition there for our yeasties, the WPOSW, not so much.

Good solid info BD. I've been staging my nutrient addition for a good while now and like the results. The only thing I would add is I also use Go Ferm Protect when rehydrating my yeast because it provides the micronutrients the yeast needs, except for zinc, which I add to my ferments.
Also, when fermenting a wort that already has much of the nutrients needed, the addition of too much can be counter productive and result in off flavors. For example, with my all grains I cut way down on the amount of Fermax I use since the grains have much of what the yeast needs.
