Wanted to say Hey

I am new to this hobbie, can't wait to get going. I have bought me a little 3 gallon copper still, I have pics on this site somewhere. got me a fermenting kit from Smileys, came quick and prompt. Bought me the moonshining book along with my kit, some pretty good reading for a new guy like myself. I am having a hard time with all the acronyms in this hobbie, but will pick them up eventually. As I have said before, I was a bartender for thirty years, now working in the Nuclear Energy Business, in Chemistry. I started my first batch of mash with the turbo yeast that came with my kit that I bought from Smileys, but it seemed to be getting very hot the second day, that I stuck it out in the cold for the night, and fell asleep, I think that I may have killed it, so I threw it out. Started another beer, with a beer kit that I had laying around (Mr. Beer) Oktoberfest, and added some malt to it, that I also received from Smileys. I am now on my second week of this, smells so good, can't wait to bottle it up, and then wait for about two more weeks, before I refrigerate it. Any suggestions on what recipe I should use, with my little feller 3 gallon pot?? I know it ain't gonna produce much, but this is a learning step, by another newbie. But I do have me a 10 gallon keg, that is gonna be turned into a nice little pot, with a reflux column to be added. I like the thought of a clean liquor also, even though I do love me some corn whiskey. I did go by the Dark Corner in Greenvile, South Carolina. Very nice setup they got. Bought me some of that high dollar moonshine, it was good though. Also made me a batch of ApplePie with it, added a Liter of Everclear to the recipe, man that stuff was good. As my friends and relatives will atest to it.. Anyhow wanted to say hey again, and thanks for any future advice I am sure I will need and get...

i've been meaning to get over there to Dark Corner, just keep putting it off for whatever reason. don;t get to many days off. glad to hear its good stuff.

Yea it had a lot of flavor, but I was told they only ferment their mash for three days. Seems kind of short to me, but, they were about to start an all spirits runs, wondering how that turned out for them??
