what are you using for your rum wash?

From what I've heard around town, most rummies are using baker's yeast and some are using 493. Others would like to try 493 but it seems hard to come by. Others will chime in, probably.

One of my best rum runs was made with 'ale yeast' - no idea what particular strain it was -that was pretty all that was written on the packet.
Otherwise I use bakers.
Where has all the rum gone? . . .

I use superstart, rack off the trub, mix up another batch, let it cool, mix into the old trub and run 5-10 generations with the flavor improving each time. Used to use red star dry baker's but pitched new each time. Both good, I thought superstart let more molasses flavor come through.

Brewers say the yeast dosent get in its groove until the third generation. I wonder if thats the same for a wash.

493! love it. It likes it warm though, unless you have ferment temp control save it for mid summer then ferment it in a (full) large vessel to keep the heat up (higher volume to surface area means relatively less heat loss). If you can get 493, I wouldn't even entertain the idea of using ec1118. It's a neutral profile yeast intended for a cleanish ferment of fructose - i.e. not rum.
