Recap: Last year I done an All-Grain barley malt where the malt had been peat smoked in a home made smoker, I did not roast the malted barley further, only peat smoked, as I needed the enzymatic properties that the DP afforded me to convert and roasting the grains would have lowered the properties... No sugar or colourings were used in this process. I only made 10L as a small experiment, any volume smaller than that would have been futile... It was over oaked for 8 weeks, with ¼ of a vanilla pod. then, when the oak and pod were removed, supposedly, should have been left for 3 years to mature/age...
I got home today after Xmas shopping with Mrs Sam and caught a glance of the ageing 10L brown carboy (dated 6th - Dec - 2010) as I prepared to keg my American IPA clone (beer). So, I decided to steal a snifter from the mysterious carboy with my home made copper wine/whisky thief. What a friggin welcome I received as I took a sniff from the 120 proof in my glass. I cant really describe it. I diluted the bounty to 80 proof and had a sip. Smooth, earthy, but young... Definite signs of maturing out to a full bodied malted Scotch Whisky, so good in fact, I will be repeating the process in the New Year to try and get a 30L oak barrel Santa is bringing me, filled to mature and will include a full blow by blow. We are having a few friends over for Xmas and one of them is a real whisky nose, so it will be interesting to hear his views... I'll keep you all posted...
Tonight, my jar is filled with UJSSM and a dash of Ginger Ale.... Mmmmmm...

Currently I have a small glass of Mr P's Hot Cinnamon Schnapps that was chilled in the freezer. Nice and cool but warms ya from the inside.

I am at a condo in the Mountains watching the snow fall, last night I made two different recipe's of duck farts and put them in the freezer. After dinner my wife and I are going to do a taste test to see which one we like best. All liquor ingredience is home made.
Recipe #1
1/2 oz whiskey
1/2 oz amaretto
1/2 oz Irish Cream
Layer ingredients in order as listed above (put in small shot glasses)
Recipe #2
1/2 oz coffee liqueur
1/2 oz Irish cream
1/2 oz whiskey
Layer ingredients in order as listed above

OK,OK this is an after dinner dessert! When you put them in the freezer they never freeze completely but you also don't get the same separation but they are tasty. These are two different recipes that I haven't tried yet and still have a couple hours before dinner. Beer with a 3 ounce glass of UJSSM beside it , just as i used to drink my Wild Turkey. but the Uj is much smoother. Just for sippin @ 40%.

Man I loved this thread on the 'ol Homebrew forum! I usually posted COFFEE!
I am currently drinking New Belgium Snow Day black IPA.
I WILL be getting into a bottle of UJSM aged for a few weeks on oak, then bottled and left in the basement for the last 4 years!

Well, apparently I didn't understand all that I should have about the head cut back in the day. This was stilled in January 2008 and smells wonderful!
Unfortunately, it burns! BURNS! like... WOAH HELL! it's 80 proof and burns like my 151 proof "Root Juice"!

Drinking some of my 27 month old modified UJSSM @ barrel strength. Tastes like a brandied bourbon ... Very fine. Was a hit this evening. Very pleased. Hope you don't mind the bragging

Polishing off a little bit of UJ made with Sugar Cane Syrup instead of white sugar. it's only about a month and half old, but damn it's good. Rummy UJ.

Everything I've got is aging. So for now Woodford Reserve. I tried Blanton's for the first time earlier today.... damn is that tasty!
