Flavoring, Aging & Adding Fruit & Adjuncts to Liquior

Hey Guys,

I'm interested in flavoring the conjours of my pot still, mainly with fruit in the upcoming months. Take for instance in NJ strawberries are usually the first fruits we see off of the vine. If I was to take some low abv likker and filled a 1qt mason jar with both, would I have to pull a vacuum on the jar to keep the berries from rotting or should I just let them do their thing without the vacuum? Not sure what you consider "low abv liquor," but anything 40% or above will be fine to soak your fruits in. No vacuum needed. Just put in the fridge and let it rest.

Yea Braz, 40% is the point I was talking about. My mouth is watering with that strawberry panty dropper recipe... wife hopefully will like it too :wink:
