Cinnamon in UJSM

Post by astronomical »

I was messing around and threw a stick of cinnamon in a liter of UJSM. I gave it a taste and the cinnamon had done some prertty strange stuff. It tastes like water going down and has a burn after about three seconds, in which the cinnamon flavor envelops fully. It seems like it REALLY smoothed the front end. Not sure whats going on here. The spirit is 60% and seems like its 30%.

What's it like when you have it diluted down to 30 - 40%

Sounds interesting.

How long did you let it sit on the stick? How much are we talking?

1 stick (exact same brand as your "fire piss" picture) in 1 liter for about 2 weeks now. I havent diluted any of it yet. It kinda made the front end too weak and insipid to truly enjoy, but, it sure it strange.

I'm just wondering what it would do longer? So you say it smoothed out the frontend but has a bite on the backend? I kinda get the same with the fire piss. I like it like that. I had been thinking of trying it with a whiskey type drink. I was thinking one stick and an oak stick. Maybe a touch of glycerin or simple syrup. Just enough for a little mouth feel? I just bought some glycerin last night to start playing with.

I tried the fireball whiskey the other day. It wasn't bad. Even for my sweet tooth it was a little sweet for a whiskey. But it maybe something like what you have done. Just without the sweet.

That sounds like a great idea. Fireball is good but way too sweet for me too. I've been making an apple pie out of me and my buddy's peach shine we ran on his pot still and doubling up on the cinnamon and I've been pretty happy with it. I gotta get my Boka/VM finished so I can run me some UJSSM and try that!

I have Ran hundreds of gallons of ujsm and so far apple pie is my biggest crowd pleaser its a modified recipe from the site..Cider, Apple juice, Nutmeg, Cinnamon, Molasses, White sugar, Clove, Pure Vanilla Extract, and glycerin.

Since so much of it is made in a 4 gallon batch of pie I end up with about 14-16 cin sticks left over that get tossed. So one day I took some 55% and about 14 sticks after making some pie and jarred it in a 1 quart jar. two weeks later its like a beautiful cinnamon liquor so much capsaicin (heat) and flavor!

I now have over a gallon of it if you like hot damn you will love this for sure.

I add one stick (5") to a gallon of Sweet Feed and a small piece of vanilla bean ( 1.5" ),
with 2 pieces of heavy char and 6 pieces of oak cooked at 400 degrees in the BBQ for
4 hours.

Let it age for up to - Well until I needed something to drink  - about 2 months

Mommy Coyote and I love it!

Coyote has got it... i use the cinnamon and charred heavy toast oak for ~3week to a month then pull the cinnamon and add a vanilla bean, intact, for like a week to two for that finish and a little suppression on the cinnamon kick, good stuff esp a favorite for shots at the house, replaced goldslaugher (sp) here
