mixed fruit suggestions??
I have access to a good pile of blue berries that i plan on freezing until i'm ready for that (don't want to ruin um due to my learning curve) and also have strawberries, fig and oranges grown locally.... i know this is something i'm going to dip into and will start piling them up until i feel right with mashing and cookin it... my question is: have any of you ever mixed two or more of these fruits in a mash? (please include grocery store bought stuff also if that's where i have to go to get um)
South....waaaaaayyyy south bayou blood can be as potent as that clear stuff coming out the still..

i think i printed out that recipe the 1st day i got found this site... definitly gonna give it a spin ... don't know any man that wouldn't at least give it a shot... ha ha... but i got a question for ya... what kind of likker do you mix it with? does it matter as long as it's at the proof listed? or does it have to be a brandy or vodka to taste right?

I've done it with raspberrys and mulberries. Both are excellent.

Re: mixed fruit suggestions??
I put some of my first run corn/sugar liquor in mason jars with one full of peaches and the other full of boysenberries at @55%. After a couple weeks it really didn't seem to be taking on the flavor of the fruit. As I am a bit impatient and wanted to test a theory, I left the peaches in their jar but poured the boysenberry mix into a bottle with a small neck (wine bottle type) then used one of these:
to suck out the air. I had also added a bit of sugar and a bit of light corn syrup and just a drop of boysenberry extract.
The vacuum really did the job. You can see the fruit breaking down, literally, before your eyes.
Now I just need to figure out how to adapt it to a wide mouth jar, cause cramming peaches down a wine neck doesn't appeal and I'm not after pureed looking stuff...

They make attachments for Food Saver type vacuum sealers to put a standard mason jar under a vacuum, Google will find quite a few options for you.Frosteecat wrote: Now I just need to figure out how to adapt it to a wide mouth jar, cause cramming peaches down a wine neck doesn't appeal and I'm not after pureed looking stuff...
